Butcher & The Bear is a steakhouse built around the marriage of two traditions: the discipline of a classic butcher shop and the theatrical warmth of a Prohibition-era speakeasy. Located at 2721 North Halsted Street in Lincoln Park, the restaurant focuses on hand-cut steaks, aged proteins, and a bar program built for slow nights out. Founded by Kosti Demos (owner of Sapori Trattoria), Chris and Susie Maloyan (owners of Second City Prime), and Executive Chef Saul Ramos, Butcher and the Bear is a partnership born from a shared passion for exceptional dining. Each founder brings a unique strength to the table—from premium sourcing and culinary artistry to a legacy of warm, authentic hospitality.
